Executive Chef
Gregory Carso
Executive Chef Gregory Carso began his culinary career as a student at Chicago’s Washburne Trade School and, later, at La Varenne École de Cuisine in Paris. Following graduation, Carso did stints with the Levy Restaurant organization and the Cash House Restaurant. Chef Carso has served as the Executive Chef at numerous ClubCorp properties since 1986, including River Club, CME Club, The Meadow Club and most recently, Lake Shore Club. Since moving to the Metropolitan Club in 1996, it’s become clear that the challenges of a busy kitchen are a perfect fit for this energetic chef. Chef Carso and his team have been celebrated company-wide with awards such as Food and Beverage Team of the Year 1998, Shining Star Award 2002, Super Star Award 2007, and Food and Beverage Team Star Award 2008. This great leader is known for his consistent ongoing training and focus on growth of his culinary coworkers. “One of the things I love most about being a chef,” Carso said, “is the ‘high’ I get after a hectic day of troubleshooting and making things work.”
